Scale
- 1 1/2 pounds beef sirloin steak tips, cut into bite sized pieces
- 2 cups beef broth
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 2 tablespoons all purpose flour
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Season the steak tips evenly with salt and black pepper.
- Heat a large skillet over medium high heat and add olive oil.
- Sear half of the steak tips in a single layer for 2 to 3 minutes per side until browned. Remove and repeat with remaining beef.
- Reduce heat to medium and add butter and chopped onion to the skillet. Cook until softened, then stir in minced garlic and cook for 30 seconds.
- Sprinkle flour over the onion mixture and stir well to form a paste.
- Gradually pour in the beef broth while stirring constantly, scraping up browned bits from the pan.
- Stir in Worcestershire sauce and bring to a gentle simmer. Cook until the gravy thickens, about 5 minutes.
- Return the steak tips to the skillet and simmer gently for another 5 minutes until tender and coated in gravy.
- Taste and adjust seasoning if needed, then serve warm.
Notes
- Sear the beef in batches to prevent steaming and ensure proper browning.
- If the gravy becomes too thick, add a small splash of beef broth while reheating.
- You can substitute cornstarch mixed with cold water for flour if needed.
- Let the dish rest for a few minutes before serving to allow flavors to settle.
