Description

This quick and easy pizza bread is perfect for lunchboxes, snacks, or morning tea. Inspired by Bakers’ Delight pizza bread, it’s an economical and homemade alternative that stays fresh for up to 4 days. Sour cream and olive oil keep it moist, while your favorite pizza toppings make it irresistible!


Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda (sifted)
  • 1/2 tsp kosher salt

Wet Ingredients:

  • 1 large egg (60g / 2 oz)
  • 1 cup milk (full or low fat)
  • 1/4 cup sour cream (or plain yogurt)
  • 3 tbsp olive oil

Cheese for Batter:

  • 1 cup shredded cheese (Colby, Cheddar, Monterey Jack, or a blend)

Pizza Toppings:

  • 1 1/2 cups shredded cheese (same as above)
  • 1/2 cup pizza sauce (store-bought or homemade)
  • 1/4 red onion, finely sliced
  • 1/2 green bell pepper, finely sliced
  • 1/4 cup sliced kalamata olives
  • 50g (2 oz) pepperoni slices (~1/2 cup)

Instructions

1. Preheat & Prep:

  • Preheat oven to 350°F (180°C) (or 320°F (160°C) fan-forced).
  • Spray a 9×13” (23×33 cm) metal pan with oil, then line with parchment paper.

2. Mix the Batter:

  • In a large bowl, whisk together all dry ingredients.
  • In a separate bowl, whisk all wet ingredients until well combined.
  • Pour wet ingredients into dry ingredients and mix with a spatula until mostly combined.
  • Add cheese and stir until no dry flour remains (small lumps are fine).

3. Assemble the Pizza Bread:

  • Scrape batter into the prepared pan and spread evenly.
  • Spread pizza sauce on top.
  • Sprinkle with shredded cheese, followed by onion, bell pepper, olives, and pepperoni.

4. Bake & Cool:

  • Bake uncovered for 25 minutes.
  • Cover loosely with foil or a baking tray and bake for another 15 minutes.
  • Let cool 10 minutes in the pan, then lift out using the parchment paper.
  • Cool for another 10 minutes before slicing.

5. Serving Suggestions:

  • Serve at room temperature or warm in the oven with a drizzle of olive oil and a sprinkle of oregano.

Notes

  • Storage: Stays fresh for 4 days in an airtight container.
  • Custom Toppings: Add mushrooms, cooked sausage, or any of your favorite pizza ingredients.
  • For a crisper top, broil for 2 minutes after baking.
