Description

Crispy fried chicken tucked inside flaky homemade biscuits and brushed with a warm honey butter glaze. This comforting sandwich delivers the perfect balance of crunchy, tender, sweet, and savory in every bite.

  • 4 boneless skinless chicken thighs
  • 1 1/2 cups all purpose flour, divided
  • 1 tablespoon baking powder
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, cold
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup honey
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper. Heat oil in a heavy skillet over medium heat for frying.
  2. In a bowl, combine 1 cup all purpose flour, baking powder, granulated sugar, and 1/2 teaspoon salt. Cut in cold butter until crumbly, then add enough buttermilk from the measured amount to form a soft dough.
  3. Turn dough onto a floured surface, gently pat to about 1 inch thick, and cut into biscuits. Place on prepared baking sheet.
  4. Bake biscuits for 12 to 15 minutes until golden brown and fluffy.
  5. In another bowl, marinate chicken thighs in remaining buttermilk with remaining salt, black pepper, paprika, and garlic powder for at least 30 minutes.
  6. Dredge marinated chicken in remaining 1/2 cup flour, pressing to coat evenly.
  7. Fry chicken for 6 to 8 minutes per side until golden brown and cooked through to an internal temperature of 165 degrees Fahrenheit.
  8. Remove chicken and place on a wire rack to rest briefly.
  9. Mix melted butter with honey to create the honey butter glaze and brush generously over hot chicken.
  10. Slice biscuits in half, place glazed chicken inside, and serve immediately.
