Description

A delicious way to transform leftover lamb into something new and exciting, these brioche burgers are filled with tender shredded lamb, crisp lettuce, juicy tomato, and a creamy mustard sauce, all tucked inside soft golden buns.


Ingredients

  • 2 cups shredded cooked lamb
  • 4 brioche burger buns
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the shredded cooked lamb to the skillet. Season lightly with salt and black pepper and warm gently for 4 to 5 minutes until heated through.
  3. In a small bowl, mix the mayonnaise and Dijon mustard until smooth.
  4. Slice the brioche burger buns and lightly toast them in the skillet until golden.
  5. Spread the mayonnaise mixture evenly over the bottom halves of the buns.
  6. Divide the warm shredded lamb evenly among the buns.
  7. Top with shredded lettuce, sliced tomato, and thinly sliced red onion.
  8. Place the top buns over the fillings and press gently.
