Description

Crock Pot Carne Guisada is a rich and flavorful Mexican beef stew. Tender chunks of beef are slow-cooked with aromatic spices, vegetables, and a tomato-based sauce, making it perfect for a comforting meal served with rice or tortillas.


Ingredients

  • 900 g (2 lbs) beef, chuck or braising steak
  • 2 tbsp flour, all purpose / plain
  • 1 tsp brown sugar
  • 2 tsp ground cumin
  • 1 tsp chili powder, mild
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, finely diced
  • 4 garlic cloves, minced
  • 1 green bell pepper, diced
  • 2 tbsp tomato paste
  • 2 large tomatoes, diced or 400g (14 oz) can crushed tomatoes
  • 1/2 cup beef broth (or use beef stock cube)
  • 1 bay leaf
  • 2 sprigs fresh oregano or 1 tsp dried
  • Cilantro / coriander, to serve

Instructions

  1. In a bowl, toss the beef chunks with flour, brown sugar, cumin, chili powder, cayenne pepper, salt, and black pepper until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides. Transfer to the crock pot.
  3. In the same skillet, sauté the onion, garlic, and green bell pepper until softened, about 5 minutes. Stir in tomato paste and cook for 1-2 minutes.
  4. Add the sautéed vegetables, diced or crushed tomatoes, beef broth, bay leaf, and oregano to the crock pot. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the sauce is rich.
  6. Remove bay leaf and adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with fresh cilantro or coriander, alongside rice, tortillas, or your favorite sides.

Notes

  • For extra depth of flavor, marinate the beef with the spices for 1 hour before searing.
  • You can add diced potatoes or carrots to the stew for additional heartiness.
  • Leftovers store well in the refrigerator for up to 3 days or can be frozen for up to 2 months.
