Description

Golden, crispy-edged cauliflower with a hint of curry and maple—perfectly tender inside! Ready in 30 minutes, this easy side dish is vegan, gluten-free, and packed with flavor. Great for weeknights or as a standout veggie side. 


Ingredients

  • 1 large head cauliflower, cut into florets

  • 2-3 tbsp avocado oil, divided

  • 1 tsp sea salt

  • 1 tbsp curry powder

  • 1/2 tsp maple syrup (optional)

Optional Garnishes

  • Fresh cilantro

  • Toasted almonds

  • Tahini drizzle


Instructions

  1. Prep: Preheat oven to 450°F (232°C).

  2. Season: Toss cauliflower with 1 tbsp oil, salt, curry powder, and maple syrup.

  3. Sear: Heat remaining oil in an oven-safe skillet over high heat. Add cauliflower and sear 5 mins until golden.

  4. Roast: Transfer skillet to oven. Roast 10–15 mins, stirring every 5 mins, until crispy.

  5. Serve: Garnish with cilantro, almonds, or tahini.


Notes

  • Extra crispy? Spread florets on a baking sheet (no crowding!).

  • Spice swap: Use smoked paprika or turmeric instead of curry.

  • No skillet? Roast directly on a sheet pan at 425°F (220°C) for 20–25 mins.
