2-3 tbsp avocado oil, divided

1 tbsp curry powder

Instructions

Prep: Preheat oven to 450°F (232°C).

Season: Toss cauliflower with 1 tbsp oil, salt, curry powder, and maple syrup.

Sear: Heat remaining oil in an oven-safe skillet over high heat. Add cauliflower and sear 5 mins until golden.

Roast: Transfer skillet to oven. Roast 10–15 mins, stirring every 5 mins, until crispy.

Serve: Garnish with cilantro, almonds, or tahini.
