Instructions
- Preheat oven: Set oven to 400°F (200°C).
- Prepare potatoes: In a large bowl, toss potato wedges with olive oil, lemon juice, minced garlic, oregano, salt, and pepper until evenly coated.
- Roast: Spread potatoes in a single layer on a baking sheet. Roast for 35–40 minutes, turning halfway through, until golden and crispy on the edges.
- Garnish and serve: Sprinkle with chopped fresh parsley before serving.

- For extra crispiness, parboil the potato wedges for 5 minutes before roasting.
