- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 package (16 oz) potato gnocchi
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 cups heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add diced onion and garlic. Sauté until fragrant and translucent, about 3-4 minutes.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Add gnocchi to the skillet and cook according to package instructions, usually about 2-3 minutes, until gnocchi float to the top and are tender.
- Stir in Parmesan cheese, dried thyme, salt, and pepper. Return cooked chicken to the skillet and stir to combine.
- Cook for an additional 2 minutes until the sauce thickens slightly.
- Garnish with fresh parsley before serving hot.
