  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 package (16 oz) potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  2. In the same skillet, add diced onion and garlic. Sauté until fragrant and translucent, about 3-4 minutes.
  3. Pour in heavy cream and chicken broth. Bring to a simmer.
  4. Add gnocchi to the skillet and cook according to package instructions, usually about 2-3 minutes, until gnocchi float to the top and are tender.
  5. Stir in Parmesan cheese, dried thyme, salt, and pepper. Return cooked chicken to the skillet and stir to combine.
  6. Cook for an additional 2 minutes until the sauce thickens slightly.
  7. Garnish with fresh parsley before serving hot.
