Ingredients

For the Meatloaf:

  • 1.5 lbs ground beef
  • 1 cup breadcrumbs
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce

For the Potato Casserole:

 
  • 2 lbs potatoes, peeled and sliced
  • 1 onion, sliced
  • 2 cups shredded cheddar cheese
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • Salt and pepper to taste
  • 2 tbsp butter, melted

Instructions

  • Prepare the Meatloaf Mixture:

    • In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, salt, pepper, ketchup, and Worcestershire sauce.
    • Mix well and shape into a loaf.
  • Prepare the Potato Casserole:

    • In a separate bowl, mix sliced potatoes, sliced onion, half of the shredded cheddar cheese, cream of mushroom soup, milk, salt, and pepper.
  • Assemble the Casserole:

    • Preheat oven to 375°F (190°C).
    • In a 9×13 inch baking dish, spread the potato mixture evenly.
    • Place the meatloaf on top of the potatoes.
    • Top the meatloaf with extra ketchup.
    • Sprinkle the remaining cheddar cheese over the potatoes.
    • Drizzle the melted butter over the top.
  • Bake:

    • Cover with foil and bake for 1 hour, or until the potatoes are tender and the meatloaf is cooked through.
    • Remove foil for the last 15 minutes to brown the cheese.

 

  • Cool & Serve:

    • Let it cool slightly before serving.
