Description

Cowboy Fried Rice is a bold Tex-Mex take on classic fried rice, packed with smoky pulled pork, black beans, and a kick of jalapeño. This one-skillet meal is perfect for busy nights, coming together in just 30 minutes. With a blend of warm spices and hearty ingredients, it’s a satisfying dish that’s perfect for easy dinner recipes and high-protein meals.


Ingredients

  • 1 cup cooked pulled pork, finely shredded
  • 1 tbsp olive oil
  • 1/2 cup diced white onion (about 1/2 medium onion)
  • 1 jalapeño, seeded and diced
  • 3 tsp minced garlic (about 3 cloves)
  • 1/2 cup black beans, drained
  • 1 (10-oz) can diced tomatoes with green chilies, drained
  • 2 eggs, lightly beaten
  • 3 cups cooked rice
  • 1 tbsp Worcestershire sauce
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp paprika
  • 1/2 tsp chili powder
 
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet or wok over medium-high heat. Add diced onion, jalapeño, and garlic, cooking until tender (about 3 minutes).
  • Stir in black beans, diced tomatoes with green chilies, and pulled pork, mixing well.
  • Push the mixture to one side of the skillet and pour in the beaten eggs on the other side. Scramble until mostly cooked, then mix with the vegetables.
  • Add the cooked rice, Worcestershire sauce, cumin, oregano, paprika, chili powder, and salt and pepper to taste. Stir well and cook until the rice is heated through and slightly browned.

 

  • Serve hot, garnished with fresh cilantro or shredded cheese if desired.

Notes

  • Swap pulled pork for shredded chicken or ground beef for variety.
  • Use brown rice or cauliflower rice for a healthier alternative.

 

  • Top with avocado, salsa, or a dollop of sour cream for extra flavor.
