- 1 cup cooked pulled pork, finely shredded
- 1 tbsp olive oil
- 1/2 cup diced white onion (about 1/2 medium onion)
- 1 jalapeño, seeded and diced
- 3 tsp minced garlic (about 3 cloves)
- 1/2 cup black beans, drained
- 1 (10-oz) can diced tomatoes with green chilies, drained
- 2 eggs, lightly beaten
- 3 cups cooked rice
- 1 tbsp Worcestershire sauce
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat. Add diced onion, jalapeño, and garlic, cooking until tender (about 3 minutes).
- Stir in black beans, diced tomatoes with green chilies, and pulled pork, mixing well.
- Push the mixture to one side of the skillet and pour in the beaten eggs on the other side. Scramble until mostly cooked, then mix with the vegetables.
- Add the cooked rice, Worcestershire sauce, cumin, oregano, paprika, chili powder, and salt and pepper to taste. Stir well and cook until the rice is heated through and slightly browned.
- Serve hot, garnished with fresh cilantro or shredded cheese if desired.
