Description

This Italian Chicken Parmesan is a classic, crispy, and cheesy dish perfect for an easy weeknight dinner. Juicy chicken breasts are coated in a flavorful breadcrumb crust, topped with marinara sauce, mozzarella, and Parmesan, then baked to perfection. Serve over spaghetti for a comforting and satisfying meal!


Ingredients

  • 1 cup Parmesan cheese, grated (divided)

  • 2 eggs, whisked

  • 1 1/2 cups bread crumbs

  • 1 tablespoon Italian seasoning (thyme, oregano, basil, rosemary)

  • 1 teaspoon garlic powder

  • 1/2 teaspoon each salt & pepper

  • 4 chicken breasts, thinly sliced

  • 2 tablespoons olive oil

  • 4 slices mozzarella cheese

  • 1 1/2 cups marinara sauce

  • 1/3 cup shredded mozzarella cheese

  • 2 tablespoons fresh basil, chopped

 
  • 10 oz spaghetti (to serve with chicken)


Instructions

  • Prepare Breading Stations

    • Set up three bowls:

      • Bowl 1: ½ cup Parmesan cheese.

      • Bowl 2: Whisked eggs.

      • Bowl 3: Bread crumbs, Italian seasoning, garlic powder, salt, and pepper.

  • Bread the Chicken

    • Coat each chicken breast in Parmesan cheese first.

    • Dip into the egg mixture next.

    • Finally, coat in the bread crumb mixture, pressing lightly to ensure even coverage.

  • Sear the Chicken

    • Heat olive oil in a large cast iron skillet over medium-high heat.

    • Brown the chicken for 3 minutes per side (6 minutes total). Work in batches if needed.

  • Bake the Chicken

    • Preheat oven to 375°F (190°C).

    • Transfer browned chicken to an oven-safe skillet or baking dish.

    • Layer each chicken breast with mozzarella slices, then pour marinara sauce over the top.

    • Sprinkle with shredded mozzarella and the remaining ½ cup Parmesan.

    • Bake for 30 minutes, or until the sauce is bubbling and the cheese is melted.

 

  • Serve

        • Sprinkle with fresh basil and serve over cooked spaghetti.


Notes

  • For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.

  • Add red pepper flakes for a spicy kick.

 

  • Substitute gluten-free breadcrumbs for a gluten-free version.
