- 2 1/2 cups vanilla wafer cookies, finely crushed
- 1/4 cup unsweetened cocoa powder
- 1 cup powdered sugar
- 1 cup chopped pecans
- 2 tablespoons corn syrup
- 1/4 cup bourbon
- 2 cups semi sweet chocolate chips
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine crushed vanilla wafer cookies, cocoa powder, powdered sugar, and chopped pecans.
- Add corn syrup and bourbon to the dry mixture and stir until a thick, evenly combined dough forms.
- Scoop tablespoon sized portions and roll into smooth balls using your hands.
- Place the rolled balls onto the prepared baking sheet and chill for 20 to 30 minutes to firm up.
- Melt the semi sweet chocolate chips in a heat safe bowl over gentle heat, stirring until smooth.
- Dip each chilled ball into the melted chocolate, coating completely, then return to the parchment lined sheet.
- Allow the chocolate coating to set fully before serving or storing.
Notes
- If the mixture feels dry, add an extra teaspoon of corn syrup.
- Chill before dipping for easier coating.
- Store in an airtight container in the refrigerator for up to 1 week.
- For a non alcohol version, substitute bourbon with apple juice.
