Description

Rich, fudgy chocolate bites made with crushed cookies, cocoa, pecans, and a warm splash of bourbon, then dipped in smooth melted chocolate. A classic no bake treat that is perfect for holidays and gatherings.


Ingredients

  • 2 1/2 cups vanilla wafer cookies, finely crushed
  • 1/4 cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • 1 cup chopped pecans
  • 2 tablespoons corn syrup
  • 1/4 cup bourbon
  • 2 cups semi sweet chocolate chips

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine crushed vanilla wafer cookies, cocoa powder, powdered sugar, and chopped pecans.
  3. Add corn syrup and bourbon to the dry mixture and stir until a thick, evenly combined dough forms.
  4. Scoop tablespoon sized portions and roll into smooth balls using your hands.
  5. Place the rolled balls onto the prepared baking sheet and chill for 20 to 30 minutes to firm up.
  6. Melt the semi sweet chocolate chips in a heat safe bowl over gentle heat, stirring until smooth.
  7. Dip each chilled ball into the melted chocolate, coating completely, then return to the parchment lined sheet.
  8. Allow the chocolate coating to set fully before serving or storing.

Notes

  • If the mixture feels dry, add an extra teaspoon of corn syrup.
  • Chill before dipping for easier coating.
  • Store in an airtight container in the refrigerator for up to 1 week.
  • For a non alcohol version, substitute bourbon with apple juice.
