- 150 grams raw small shrimp, peeled and cleaned
- 3 green onions, finely chopped
- 1 small red bell pepper, finely diced
- 1 small carrot, finely shredded
- 1 tablespoon soy sauce

- 1/2 teaspoon black pepper
- 2 tablespoons cooking oil
Instructions
- Preheat a nonstick skillet over medium heat.
- In a large mixing bowl, beat the eggs until slightly frothy.
- Add shrimp, green onions, red bell pepper, carrot, soy sauce, salt, and black pepper. Mix until evenly combined.
- Add cooking oil to the skillet and swirl to coat the surface evenly.
- Pour the egg mixture into the skillet, spreading it evenly.
- Cook undisturbed for 4 to 5 minutes until the bottom is lightly golden and set.
- Carefully flip the omelette or cover the skillet and cook for another 3 to 4 minutes until fully set in the center.
- Remove from heat and let it rest for 1 minute before slicing.
- Slice into wedges and serve warm.
