- 1 pound ground beef or turkey
- 1/2 cup chopped onion
- 1 package chili seasoning, divided
- 1 can (14.5 oz) diced or crushed tomatoes
- 1 can (15 oz) chili beans, hot or mild
- 1 cup frozen corn
- 1 3/4 - 2 cups water
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1/2 cup milk
- 1 1/3 cups mashed potato flakes
- 1 cup shredded cheddar or colby cheese, divided
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef or turkey with chopped onion until browned. Add half of the chili seasoning, tomatoes, chili beans, corn, water, and salt. Simmer until thickened.
- In a separate saucepan, melt butter, add milk, and stir in mashed potato flakes until smooth.
- Spread the chili mixture evenly in a baking dish. Top with mashed potatoes and sprinkle remaining cheese over the top.
- Bake for 20-25 minutes until cheese is melted and slightly golden.
- Let rest for 5 minutes before serving.

- Use fresh mashed potatoes if preferred over flakes.
- Garnish with chopped parsley or green onions for extra color and flavor.
