Description

Juicy chicken thighs are seared until golden, then baked in a rich honey soy garlic glaze until glossy and tender. Served with mashed potatoes and a fresh salad, this comforting dinner feels special enough for guests and easy enough for a weeknight.

  • 6 bone-in, skin-on chicken thighs, about 2 1/2 pounds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/2 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, finely chopped
  • 3 cups mashed potatoes, optional for serving
  • 2 cups romaine lettuce, chopped, optional for serving
  • 1/2 cup cherry tomatoes, halved, optional for serving

Instructions

  1. Preheat the oven to 400°F. Pat the chicken thighs dry and season both sides with salt and black pepper.
  2. In a small bowl, whisk together the soy sauce, honey, chicken broth, apple cider vinegar, minced garlic, and the cornstarch mixed with water.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the chicken thighs skin side down and sear for 5 to 7 minutes until deeply golden. Flip and cook for 2 more minutes.
  4. Pour the glaze mixture into the skillet around the chicken and let it bubble gently for 1 to 2 minutes.
  5. Transfer the skillet to the oven and bake for 20 to 25 minutes, or until the chicken reaches 165°F at the thickest part.
  6. Remove from the oven and spoon the thickened glaze over the chicken several times. Sprinkle with chopped parsley.
  7. Serve hot with mashed potatoes, romaine lettuce, and cherry tomatoes, with extra glaze spooned over the top.

Notes

  • Patting the chicken dry helps it brown better and gives the glaze more flavor.
  • Do not overcrowd the pan or the chicken may steam instead of sear.
  • Add a splash of broth when reheating leftovers if the glaze becomes too thick.
  • Boneless chicken thighs can be used, but reduce the cooking time slightly.
