Description

Chicken Taquitos are crispy, golden rolled tortillas filled with shredded rotisserie chicken, melted cheese, and green chiles. Served with sour cream, guacamole, or salsa, they make a perfect appetizer or snack.


Ingredients

  • 2 tablespoons chili powder
  • 1 teaspoon kosher salt, plus more to taste
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 5 cups shredded rotisserie chicken (from 2 chickens)
  • 2 cups shredded Monterey Jack cheese
  • 2 (4 oz.) cans chopped green chiles, drained
  • 20 (6-inch) soft flour tortillas
  • 20 toothpicks
  • Canola oil, for frying
  • Sour cream, guacamole, and salsa, for serving

Instructions

  1. In a large bowl, combine shredded chicken, cheese, green chiles, chili powder, salt, cumin, garlic powder, onion powder, and black pepper. Mix well.
  2. Place about ¼ cup of the chicken mixture on each tortilla and roll tightly. Secure each taquito with a toothpick.
  3. Heat canola oil in a large skillet over medium-high heat. Fry taquitos in batches until golden brown and crispy, about 2–3 minutes per side.
  4. Remove taquitos and drain on paper towels.
  5. Remove toothpicks before serving.
  6. Serve warm with sour cream, guacamole, and salsa.

Notes

  • Do not overfill the tortillas to prevent them from breaking while rolling.
  • You can bake taquitos at 400°F for 15–20 minutes for a healthier version.
  • These taquitos can be made ahead and frozen; fry or bake directly from frozen.
