Description

Crispy, juicy chicken spiedini skewers coated in seasoned breadcrumbs, marinated with lemon, olive oil, and garlic, then baked or fried to golden perfection — a zesty Italian favorite that’s quick, easy, and full of flavor.


Ingredients

  • 2 pounds boneless skinless chicken pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 egg
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt (for coating)
  • 1/4 teaspoon black pepper (for coating)
  • Olive oil for frying or drizzling

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, parsley, salt, black pepper, and red pepper flakes. Add chicken pieces and toss to coat. Marinate for at least 30 minutes.
  2. In one bowl, beat the egg. In another, combine breadcrumbs, Parmesan cheese, salt, and pepper.
  3. Thread marinated chicken pieces onto skewers. Dip each in egg, then coat with the breadcrumb mixture, pressing to adhere.
  4. To fry: Heat olive oil in a skillet and cook skewers for 3–4 minutes per side until golden brown and cooked through. To bake: Preheat oven to 400°F (200°C), place skewers on a lined baking sheet, drizzle with olive oil, and bake for 15–18 minutes until crisp and cooked.
  5. Sprinkle with extra parsley or Parmesan and serve with lemon wedges or dipping sauce.

Notes

  • Marinate the chicken longer for deeper flavor.
  • For extra crunch, double coat in egg and breadcrumbs.
  • Soak wooden skewers in water if grilling to prevent burning.
