- 2 pounds boneless skinless chicken pieces
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt

- 1/2 teaspoon red pepper flakes
- 1 egg
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon salt (for coating)
- 1/4 teaspoon black pepper (for coating)
- Olive oil for frying or drizzling
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, parsley, salt, black pepper, and red pepper flakes. Add chicken pieces and toss to coat. Marinate for at least 30 minutes.
- In one bowl, beat the egg. In another, combine breadcrumbs, Parmesan cheese, salt, and pepper.
- Thread marinated chicken pieces onto skewers. Dip each in egg, then coat with the breadcrumb mixture, pressing to adhere.
- To fry: Heat olive oil in a skillet and cook skewers for 3–4 minutes per side until golden brown and cooked through. To bake: Preheat oven to 400°F (200°C), place skewers on a lined baking sheet, drizzle with olive oil, and bake for 15–18 minutes until crisp and cooked.
- Sprinkle with extra parsley or Parmesan and serve with lemon wedges or dipping sauce.

- Marinate the chicken longer for deeper flavor.
- For extra crunch, double coat in egg and breadcrumbs.
- Soak wooden skewers in water if grilling to prevent burning.
