Description

A vibrant and flavorful chicken jalfrezi made with tender chicken pieces stir fried with bell peppers and onions in a rich spiced tomato sauce. Bold, comforting, and perfect for pairing with rice or flatbread.

  • 1 1/2 pounds boneless chicken thighs, cut into chunks
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large white onion, sliced
  • 1 cup tomato puree
  • 1/2 cup plain yogurt
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder, adjust to taste
  • 1 teaspoon garam masala
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons cooking oil
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a mixing bowl, combine chicken, yogurt, half of the minced garlic, half of the grated ginger, ground cumin, ground coriander, turmeric powder, chili powder, salt, and black pepper. Marinate for 15 minutes.
  2. Heat a large skillet or wok over medium heat and add cooking oil.
  3. Add the remaining garlic and ginger to the pan and sauté until fragrant.
  4. Add the marinated chicken and cook until lightly browned on all sides.
  5. Stir in the tomato puree and cook for 5 to 7 minutes until the sauce thickens slightly.
  6. Add sliced onion, red bell pepper, and green bell pepper. Stir fry for 5 to 6 minutes until vegetables are tender crisp and chicken is fully cooked.
  7. Sprinkle garam masala over the dish and mix well.
  8. Taste and adjust seasoning if needed.
  9. Garnish with chopped fresh cilantro and serve hot.

Notes

  • Do not overcook the bell peppers to maintain texture.
  • Allow spices to toast in oil briefly for deeper flavor.
  • You can adjust chili powder to control heat level.
  • Store leftovers in the refrigerator for up to 3 days.
