These juicy dumpling-inspired chicken burgers are packed with Asian-style flavors and topped with a crunchy sesame slaw, quick-pickled cucumbers, and spicy gochujang aioli. Perfect for a weeknight meal or a better-than-takeout dinner!
Ingredients
For the Burgers:

1 lb (500g) ground chicken (or pork or turkey)

3 scallions (spring onions), finely sliced

Handful of cilantro leaves, chopped

3 garlic cloves, crushed

1-inch piece of ginger, grated (or 2 tsp ginger paste)

2 tbsp light soy sauce

1 tbsp sesame oil

1 tsp fish sauce

1 tbsp black vinegar (or rice vinegar)

Black pepper, to taste

1 tbsp olive oil

Burger buns
-
1/4 cup spicy gochujang aioli (or garlic aioli/mayo)
For the Sesame Slaw:

1/4 red or white cabbage, shredded

3 scallions, finely sliced

Handful of cilantro leaves

1 tbsp sesame seeds
-
1 tbsp rice vinegar
-
1/2 tbsp sesame oil

1 tsp fish sauce
For the Quick Pickled Cucumber:

1 cucumber, thinly sliced

2 tbsp rice vinegar
-
1/2 tsp salt
Instructions

Make the Burger Patties:

In a bowl, mix ground chicken, scallions, cilantro, garlic, ginger, soy sauce, sesame oil, fish sauce, black vinegar, and black pepper.

Form into thin burger patties (about 1/3 inch thick) and place on parchment-lined plate.

Refrigerate while preparing toppings to firm up.

Prepare the Sesame Slaw:

In a bowl, mix shredded cabbage, scallions, cilantro, sesame seeds, rice vinegar, sesame oil, and fish sauce. Toss well and set aside.

Pickle the Cucumbers:

Combine sliced cucumber, rice vinegar, and salt in a bowl. Mix well and let sit.

Cook the Burgers:

Heat a skillet over high heat with olive oil.

Cook patties for about 5 minutes per side, until golden and cooked through (internal temp: 165°F/74°C).

Assemble the Burgers:

Slice and toast burger buns if desired.

Spread gochujang aioli on both halves of the buns.

Add sesame slaw, then place a burger patty on top.

Top with pickled cucumber slices, then close the burger.
