Instructions
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate bowl, whisk the eggs, melted unsalted butter, vanilla extract, and almond extract until smooth.
- Stir the wet mixture into the dry mixture, then fold in the dried cherries and sliced almonds until a soft, slightly sticky dough forms.
- Lightly dampen your hands and divide the dough in half. Shape each half into a log about 10 inches long and 2 inches wide on the prepared baking sheet, leaving space between them.
- Gently flatten the tops of the logs and sprinkle with coarse sugar if using.
- Bake for 25 minutes, or until lightly golden and firm to the touch. Remove from the oven and let cool on the baking sheet for 10 minutes.
- Using a serrated knife, slice each log diagonally into 1/2 inch pieces.
- Arrange the slices cut side down on the baking sheet and bake for 10 minutes. Flip each piece and bake for another 8 to 10 minutes, until dry and crisp.
- Transfer to a wire rack and cool completely before serving or storing.
