Description

These oven-baked Cheesy Ranch Potatoes are crispy, flavorful, and loaded with melted cheddar cheese. With just a few simple ingredients like russet potatoes, ranch seasoning, and olive oil, this easy side dish is perfect for steak, chicken, BBQ, or seafood!


Ingredients

  • 3 large russet potatoes (washed & chopped)
  • 2 tbsp olive oil
  • 3 tbsp ranch seasoning mix
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
 
  • Salt & black pepper (to taste)

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or non-stick foil.
  • Chop potatoes into bite-sized pieces.
  • In a large bowl, toss potatoes with olive oil, then mix in ranch seasoning.
  • Spread potatoes in an even layer on the baking sheet. Sprinkle with garlic powder, black pepper, and salt.
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake for another 20 minutes, or until potatoes are tender and golden brown.
  • Sprinkle shredded cheddar over the top and bake for 1-2 more minutes, until melted.

 

  • Serve warm and enjoy!

Notes

  • Extra Crispiness? Broil for 2-3 minutes after adding the cheese.
  • Spicy Kick: Add paprika or cayenne pepper for a little heat.

 

  • Make It a Meal: Toss in cooked bacon bits or serve with sour cream.
