Description

Golden, crispy cheesy beef taquitos filled with seasoned ground beef, onion, garlic, and two melty cheeses, then baked until crunchy and irresistible. Perfect for dinner, game day, or a fun snack platter.

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 small corn tortillas
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh cilantro, optional

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
  2. In a large skillet over medium heat, cook the ground beef and diced onion for 6 to 8 minutes, breaking up the meat as it browns.
  3. Drain any excess grease, then stir in the garlic, chili powder, cumin, smoked paprika, salt, black pepper, and tomato sauce. Cook for 2 more minutes.
  4. Remove the skillet from the heat and stir in the cheddar cheese and Monterey Jack cheese until evenly combined.
  5. Warm the corn tortillas on a microwave-safe plate under a damp paper towel for 30 to 45 seconds until flexible.
  6. Spoon about 2 tablespoons of filling onto each tortilla, roll tightly, and place seam-side down on the prepared baking sheet.
  7. Lightly brush or spray the taquitos with olive oil.
  8. Bake for 15 to 18 minutes, until crisp and golden brown.
  9. Let rest for 2 to 3 minutes, garnish with chopped cilantro if desired, and serve warm.

Notes

  • Warm tortillas before rolling to prevent cracking.
  • Do not overfill the tortillas or the filling may leak during baking.
  • Use freshly shredded cheese for smoother melting.
