Description

Buffalo Chicken-Stuffed Rolls are a spicy and cheesy appetizer featuring tender shredded chicken tossed in zesty buffalo sauce, cream cheese, and shredded cheddar, all wrapped in soft puff pastry or pizza dough. Perfect for game day or casual gatherings, these rolls are easy to prepare, customizable to your spice preference, and delicious warm or at room temperature.

Ingredients

Units Scale

Filling

  • 2 cups cooked shredded chicken breast
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

Dough

  • 1 sheet puff pastry or 1 pizza dough (about 1/4 inch thick rectangle)

Topping & Seasoning

  • 2 tbsp melted butter (for brushing)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Buffalo Chicken Filling: In a medium bowl, mix the shredded cooked chicken with buffalo sauce and softened cream cheese until fully combined. Stir in shredded cheddar cheese and chopped green onions until evenly distributed.
  2. Roll Out Your Dough: On a clean, floured surface, roll out your puff pastry sheet or pizza dough into a rectangle approximately 1/4 inch thick, ensuring even thickness for uniform baking.
  3. Spread the Filling Evenly: Spread the buffalo chicken mixture evenly over the dough, leaving about a 1/2 inch border around the edges to allow for sealing.
  4. Roll Up and Slice: Carefully roll the dough tightly from one long edge into a log. Using a sharp knife, slice the log into 1 to 1.5 inch thick individual rolls.
  5. Bake Until Golden and Melty: Place the rolls on a greased baking sheet or parchment-lined pan. Brush the tops with melted butter and sprinkle garlic powder, salt, and pepper. Bake in a preheated oven at 375°F (190°C) for 18-22 minutes or until the rolls are golden brown and cheese is melted.

Notes

  • Use warm chicken to help the cream cheese and buffalo sauce blend smoothly.
  • Don’t overfill the rolls to prevent bursting during baking.
  • Brushing with butter creates a golden, crispy crust.
  • Chilling assembled rolls for 15 minutes before baking helps them hold their shape.
  • Serve immediately for the best melty cheese texture.
