Description

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 1/2 cups semi sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all purpose flour, unsweetened cocoa powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon sized portions of dough onto the prepared baking sheets, spacing them evenly.
  7. Bake for 9 to 11 minutes until the edges are set and the centers remain slightly soft. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
  8. In a small bowl, mix the creamy peanut butter and powdered sugar until smooth. Spread a thick layer over each cooled cookie.
  9. Melt the semi sweet chocolate chips gently in a heatproof bowl, stirring until smooth.
  10. Spoon the melted chocolate over the peanut butter layer and allow it to set before serving.
