Instructions
- Preheat the oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
- In a medium bowl, whisk together the all purpose flour, unsweetened cocoa powder, baking soda, and salt.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon sized portions of dough onto the prepared baking sheets, spacing them evenly.
- Bake for 9 to 11 minutes until the edges are set and the centers remain slightly soft. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
- In a small bowl, mix the creamy peanut butter and powdered sugar until smooth. Spread a thick layer over each cooled cookie.
- Melt the semi sweet chocolate chips gently in a heatproof bowl, stirring until smooth.
- Spoon the melted chocolate over the peanut butter layer and allow it to set before serving.
