- 800g broccoli (fresh or frozen)
- 1 onion, peeled and chopped
- 2 garlic cloves, peeled and crushed
- 750ml stock (see notes)
- 300ml milk
- 160g Stilton cheese, grated or crumbled
To Serve:
- 40g Stilton cheese, crumbled on top
- Croutons (optional)
Instructions
On the Stovetop:
- Wash and chop the broccoli into large chunks.
- If using frozen broccoli, you can add it directly to the pot.
- In a large saucepan, add broccoli, onion, garlic, stock, and a generous amount of salt and pepper.
- Bring to a boil, cover with a lid, and simmer for 15 minutes until the vegetables are tender.
- Remove from heat, add milk and Stilton, then blend until smooth using an immersion blender.
- If needed, reheat before serving. Garnish with crumbled Stilton and croutons.
Notes
- Use vegetable stock for a vegetarian-friendly version or chicken stock for extra richness.
- For a thicker soup, reduce the milk slightly or add an extra handful of broccoli.
- Serve with crusty bread or a side salad for a complete meal.
