Description

These easy, protein-packed breakfast burritos are perfect for meal prep! Loaded with scrambled eggs, veggies, bacon, and cheese, they’re great fresh or as a freezer-friendly breakfast option.


Ingredients

  • 6 strips center-cut bacon
  • 10 large eggs, beaten
  • 4 scallions, chopped
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon salt
  • 12 tablespoons shredded cheddar or pepper jack cheese
  • 6 (8-inch) low-carb flour tortillas (such as Ole Xtreme Wellness)
  • 6 pieces heavy-duty foil (10x12 inches)
  • Hot sauce, for serving (optional)

Instructions

  2. Cook bacon in a large non-stick skillet over medium heat for 4–5 minutes until crispy. Drain on a paper towel.
  3. Whisk eggs with salt in a large bowl. Mix in scallions and bell pepper.
  4. Discard excess bacon grease, leaving about 1 teaspoon in the pan. Add the egg mixture and cook, stirring occasionally, until fully set.
  5. Assemble burritos:
    • Place ½ cup of the egg mixture onto the bottom third of a tortilla.
    • Add 1 slice of bacon and 2 tablespoons cheese.
    • Roll tightly, folding the sides in to seal. Place seam-side down and repeat.
  6. If eating immediately:
    • Heat a skillet over medium heat, spray with oil, and place burritos seam-side down.
    • Cook covered for 2 minutes per side, until golden brown.
    • Serve with hot sauce or salsa.

How to Freeze for Meal Prep:

  • Wrap each burrito tightly in foil.
  • Store in a freezer bag to prevent freezer burn.
  • Label with name and date.

How to Reheat Frozen Burritos:

From Fridge (Best results):

  1. Preheat oven to 425°F (218°C).
  2. Bake in foil for 20 minutes, turning halfway.
  3. Unwrap and bake uncovered for 5 minutes. (Optional: Broil for 2–3 minutes to crisp.)

From Freezer (Best results):

  1. Bake in foil at 425°F for 45 minutes, turning halfway.
  2. Unwrap and bake uncovered for 5 minutes. (Optional: Broil for extra crispiness.)

From Freezer to Microwave (Least favorite results):

  1. Remove foil and place on a microwave-safe dish. Cover with a paper towel.
  2. Microwave for 1 minute, then flip and cook 1–1½ minutes more.
  3. Let stand for 2 minutes before eating. (Optional: Brown in a skillet or broil for 2–3 minutes.)

From Air Fryer (Crisp results):

  1. Thaw overnight in the fridge.
  2. Discard foil, spritz with oil, and air fry at 400°F for 8–9 minutes, flipping halfway.
