Description

Soft and tender Blueberry Cake Donuts baked to perfection and topped with a smooth sweet glaze. Bursting with juicy blueberries and finished with a glossy icing, these donuts are perfect for breakfast, brunch, or a sweet afternoon treat.

Ingredients

Units Scale
  • 2 cups (250 grams) all purpose flour
  • 3/4 cup (150 grams) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (180 milliliters) milk
  • 2 large eggs, room temperature
  • 1/4 cup (60 grams) unsalted butter, melted
  • 1 cup (150 grams) fresh blueberries
  • 1 cup (120 grams) powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat Your Equipment: Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a donut pan.
  2. Combine Ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla extract until smooth. Pour wet ingredients into dry ingredients and mix until just combined. Gently fold in fresh blueberries.
  3. Prepare Your Cooking Vessel: Spoon or pipe the batter evenly into the prepared donut pan, filling each cavity about three quarters full.
  4. Assemble the Dish: Smooth the tops lightly to ensure even baking.
  5. Cook to Perfection: Bake for 15 to 18 minutes, or until a toothpick inserted into a donut comes out clean.
  6. Finishing Touches: Allow donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. Serve and Enjoy: Mix powdered sugar with a small splash of milk and a bit of mashed blueberry if desired to create a glaze. Dip the tops of the cooled donuts into the glaze and allow to set before serving.

Notes

  • Toss blueberries lightly in flour before folding in to prevent sinking.
  • Do not overmix the batter to keep donuts tender.
  • Allow glaze to set fully before stacking.
  • Store unglazed donuts in an airtight container for up to 2 days.
