- 12 lasagna noodles
- 3 cups cooked shredded chicken
- 1 cup barbecue sauce
- 1 1/2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Mix shredded chicken with barbecue sauce until well coated.
- Lightly grease a baking dish with olive oil.
- Layer noodles, ricotta, chicken mixture, onion, and mozzarella. Repeat layers and finish with cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake another 15 minutes until golden.
- Let rest for 10 minutes, garnish with parsley, and serve.
Notes
- Use rotisserie chicken for convenience
- Let the lasagna rest before slicing
- Do not over-sauce to avoid soggy texture
