Ingredients

3 lbs red potatoes, cut into 1-inch pieces

1 cup sour cream

1 medium head broccoli, cut into florets (2-3 cups)

3 cups cooked, chopped chicken

4 slices cooked bacon, crumbled

Instructions

Preheat & Prep

Preheat the oven to 350°F (175°C).

Grease a 2-quart baking dish.

Cook the Potatoes

Boil the potato pieces until fork-tender (about 10-15 minutes).

Drain and return them to the pot.

Prepare the Broccoli & Bacon

While potatoes cook, roast or steam the broccoli until crisp-tender.

Cook the bacon until crispy, then crumble it.
