Description

This Baked Potato Chicken Broccoli Casserole is the ultimate cozy, indulgent comfort food! Loaded with fluffy potatoes, tender chicken, crisp bacon, and gooey cheese, this make-ahead meal is a guaranteed crowd-pleaser.


Ingredients

  • 3 lbs red potatoes, cut into 1-inch pieces

  • 4 tbsp butter, room temperature

  • 1 cup sour cream

  • 1/2-1 tsp kosher salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 1 medium head broccoli, cut into florets (2-3 cups)

  • 3 cups cooked, chopped chicken

  • 4 slices cooked bacon, crumbled

 
  • 2 cups shredded cheese (cheddar, Mexican blend, etc.), divided


Instructions

  • Preheat & Prep

    • Preheat the oven to 350°F (175°C).

    • Grease a 2-quart baking dish.

  • Cook the Potatoes

    • Boil the potato pieces until fork-tender (about 10-15 minutes).

    • Drain and return them to the pot.

  • Prepare the Broccoli & Bacon

    • While potatoes cook, roast or steam the broccoli until crisp-tender.

    • Cook the bacon until crispy, then crumble it.

  • Mash the Potatoes

    • Mash the drained potatoes over low heat.

    • Mix in butter, sour cream, salt, pepper, garlic powder, and paprika until fluffy.

  • Assemble the Casserole

    • Stir in the broccoli, chicken, bacon, and 1 cup of shredded cheese.

    • Transfer the mixture to the prepared baking dish.

    • Top with the remaining 1 cup of cheese.

 

  • Bake & Serve

    • Bake for 20-25 minutes until hot and melty in the center.

    • Let cool for 5 minutes before serving.

Notes

  • Swap red potatoes for russet or Yukon gold if preferred.

  • Add a pinch of red pepper flakes for heat!

 

  • Can be made ahead—assemble, refrigerate, then bake when ready.
