- 2 fresh halibut fillets, about 170 grams each
- 4 tablespoons unsalted butter, softened
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 2 garlic cloves, minced
- 1 medium lemon, zest and juice
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 200 degrees Celsius, 400 degrees Fahrenheit.
- In a small bowl, mix the softened butter with chopped parsley, chopped dill, minced garlic, lemon zest, and a small squeeze of lemon juice until well combined.
- Lightly brush a baking dish with olive oil.
- Place the halibut fillets in the baking dish and season with salt and black pepper.
- Spread a generous layer of herb butter evenly over each fillet.
- Bake for 12 to 15 minutes, depending on thickness, until the fish flakes easily with a fork and appears opaque.
- Remove from the oven and let rest for 3 minutes.
- Spoon any melted herb butter from the dish over the top and serve with additional lemon juice if desired.
