Description

This baked halibut with herb butter features tender, flaky fish topped with a bright blend of parsley, dill, garlic, and lemon for a simple yet elegant seafood dinner.


Ingredients

  • 2 fresh halibut fillets, about 170 grams each
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 2 garlic cloves, minced
  • 1 medium lemon, zest and juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 200 degrees Celsius, 400 degrees Fahrenheit.
  2. In a small bowl, mix the softened butter with chopped parsley, chopped dill, minced garlic, lemon zest, and a small squeeze of lemon juice until well combined.
  3. Lightly brush a baking dish with olive oil.
  4. Place the halibut fillets in the baking dish and season with salt and black pepper.
  5. Spread a generous layer of herb butter evenly over each fillet.
  6. Bake for 12 to 15 minutes, depending on thickness, until the fish flakes easily with a fork and appears opaque.
  7. Remove from the oven and let rest for 3 minutes.
  8. Spoon any melted herb butter from the dish over the top and serve with additional lemon juice if desired.

Notes

  • Do not overcook the halibut to prevent dryness.
  • Prepare the herb butter in advance and refrigerate until ready to use.
