Description

Baked Caramelized Onions and Chicken is a savory dish where tender chicken thighs are paired with sweet, caramelized onions and sun-dried tomatoes, all baked together in a creamy, flavorful sauce. Perfect for a comforting dinner.


Ingredients

  • 3 large yellow onions, sliced thin
  • 1 head garlic, top sliced off
  • 1/2 cup sun-dried tomatoes, chopped
  • Heavy drizzle olive oil
  • 1 tsp each salt, paprika, and Italian herb blend
  • 1 tbsp balsamic vinegar
  • 1.7 lbs boneless, skinless chicken thighs, cut into strips
  • 1/2 tsp each salt, garlic powder, and onion powder
  • 1/2 cup heavy cream
  • 1 handful fresh parsley, chopped

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Prepare a baking dish by drizzling some olive oil on the bottom.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and garlic, and cook until the onions are soft and caramelized, about 15-20 minutes. Stir occasionally to avoid burning.
  3. Add the chopped sun-dried tomatoes, salt, paprika, and Italian herb blend to the onions. Stir to combine and cook for an additional 3-4 minutes.
  4. Drizzle balsamic vinegar over the onion mixture and let it cook for another 2 minutes, then remove from heat.
  5. Place the chicken strips in the prepared baking dish and season with salt, garlic powder, and onion powder.
  6. Pour the caramelized onion and sun-dried tomato mixture over the chicken, making sure it is evenly distributed.
  7. Pour heavy cream over the top and bake uncovered for 30-35 minutes, or until the chicken is cooked through and the sauce is bubbly.
  8. Once baked, sprinkle chopped fresh parsley over the top and serve immediately.

Notes

  • This dish pairs wonderfully with roasted vegetables or mashed potatoes.
  • You can substitute chicken breasts for thighs if preferred, but chicken thighs tend to stay juicier in this dish.
  • If you want extra creamy sauce, feel free to add a little more heavy cream before baking.
