- 3 large yellow onions, sliced thin
- 1 head garlic, top sliced off
- 1/2 cup sun-dried tomatoes, chopped
- Heavy drizzle olive oil
- 1 tsp each salt, paprika, and Italian herb blend
- 1 tbsp balsamic vinegar
- 1.7 lbs boneless, skinless chicken thighs, cut into strips
- 1/2 tsp each salt, garlic powder, and onion powder
- 1/2 cup heavy cream
- 1 handful fresh parsley, chopped
Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Prepare a baking dish by drizzling some olive oil on the bottom.
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and garlic, and cook until the onions are soft and caramelized, about 15-20 minutes. Stir occasionally to avoid burning.
- Add the chopped sun-dried tomatoes, salt, paprika, and Italian herb blend to the onions. Stir to combine and cook for an additional 3-4 minutes.
- Drizzle balsamic vinegar over the onion mixture and let it cook for another 2 minutes, then remove from heat.
- Place the chicken strips in the prepared baking dish and season with salt, garlic powder, and onion powder.
- Pour the caramelized onion and sun-dried tomato mixture over the chicken, making sure it is evenly distributed.
- Pour heavy cream over the top and bake uncovered for 30-35 minutes, or until the chicken is cooked through and the sauce is bubbly.
- Once baked, sprinkle chopped fresh parsley over the top and serve immediately.

- This dish pairs wonderfully with roasted vegetables or mashed potatoes.
- You can substitute chicken breasts for thighs if preferred, but chicken thighs tend to stay juicier in this dish.
