Description

This Authentic Pad See Ew is a classic Thai stir-fried noodle dish with chewy wide rice noodles, tender chicken, Chinese broccoli, and a rich, savory-sweet soy sauce. Made in just 30 minutes, this easy recipe brings bold street-food flavors right to your kitchen!


Ingredients

  • 8 oz wide rice noodles (fresh or dried)

  • 2 tbsp vegetable oil

  • 2 cloves garlic, minced

  • 8 oz chicken breast or thigh, sliced thinly

  • 1 cup Chinese broccoli (gai lan), chopped

  • 1 egg

  • 2 tbsp dark soy sauce

  • 1 tbsp light soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp sugar

  • 1/2 tsp white pepper

  • 1 tsp vinegar (optional)


Instructions

1. Prepare the Noodles:

  • If using dried rice noodles, soak them in warm water until softened, about 20-30 minutes, then drain.

  • If using fresh noodles, gently separate them.

2. Cook the Chicken:

  • Heat 1 tbsp oil in a wok or large pan over high heat.

  • Add garlic and stir-fry for 30 seconds until fragrant.

  • Add chicken and cook until lightly browned, about 3 minutes.

3. Stir-Fry the Noodles:

  • Push the chicken to one side of the pan.

  • Add 1 tbsp oil and crack in the egg, scrambling it quickly.

  • Toss in the noodles and mix everything together.

4. Add the Sauce & Vegetables:

  • Pour in dark soy sauce, light soy sauce, oyster sauce, sugar, and white pepper.

  • Stir-fry until the noodles are evenly coated.

  • Add the Chinese broccoli and cook for 1-2 minutes until slightly wilted.

5. Serve & Enjoy!

 

  • Remove from heat and drizzle with vinegar if using.

  • Serve hot with chili flakes or lime wedges on the side
