Ingredients

8 oz wide rice noodles (fresh or dried)

2 tbsp vegetable oil

2 cloves garlic, minced

8 oz chicken breast or thigh, sliced thinly

1 cup Chinese broccoli (gai lan), chopped

1 egg

2 tbsp dark soy sauce

1 tbsp light soy sauce
-
1 tbsp oyster sauce
-
1 tsp sugar
-
1/2 tsp white pepper
-
1 tsp vinegar (optional)
Instructions
1. Prepare the Noodles:

If using dried rice noodles, soak them in warm water until softened, about 20-30 minutes, then drain.

If using fresh noodles, gently separate them.
2. Cook the Chicken:

Heat 1 tbsp oil in a wok or large pan over high heat.

Add garlic and stir-fry for 30 seconds until fragrant.

Add chicken and cook until lightly browned, about 3 minutes.
3. Stir-Fry the Noodles:

Push the chicken to one side of the pan.

Add 1 tbsp oil and crack in the egg, scrambling it quickly.

Toss in the noodles and mix everything together.
4. Add the Sauce & Vegetables:

Pour in dark soy sauce, light soy sauce, oyster sauce, sugar, and white pepper.

Stir-fry until the noodles are evenly coated.

Add the Chinese broccoli and cook for 1-2 minutes until slightly wilted.
5. Serve & Enjoy!

Remove from heat and drizzle with vinegar if using.
