- 2 puff pastry sheets, thawed but cold
- 3 medium fresh apples, peeled and diced
- 1/4 cup granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 large egg, beaten
- 1 cup heavy cream
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine diced apples, granulated sugar, brown sugar, ground cinnamon, cornstarch, and lemon juice. Toss until evenly coated.
- Roll out the puff pastry sheets slightly and cut each sheet into four equal squares.
- Spoon the apple mixture into the center of each square, being careful not to overfill.
- Fold each square diagonally to form a triangle and press the edges with a fork to seal.
- Brush the tops with beaten egg.
- Bake for 18 to 22 minutes, or until golden brown and puffed.
- Allow the turnovers to cool completely before adding cream filling.
- For the cream option, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Slice cooled turnovers gently and pipe or spoon the whipped cream inside if desired.

- Keep the puff pastry cold until ready to use for best flakiness.
- Do not overfill to prevent leaking during baking.
