Description

These 4 Ingredient Broccoli Chicken Fritters are an easy, high-protein, low-carb meal perfect for lunch, dinner, or meal prep. Made with juicy chicken thighs, tender broccoli, and melted mozzarella, these fritters are crispy on the outside and packed with flavor. Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs
  • 1 medium head broccoli
  • 1 cup shredded mozzarella cheese
  • 3/4 tsp salt
  • 1/2 tsp each paprika, garlic powder, onion powder, Italian herb blend
  • 3 eggs
  • 3 tbsp olive oil (for pan)

Optional Dip:

 
  • Lazy Tzatziki (Greek yogurt, grated cucumber, lemon juice, garlic, dill)

Instructions

  • Steam the Broccoli: Add 1 inch of water to a pot and steam the broccoli for 7 minutes until fork-tender. Drain, pat dry, and chop into tiny pieces.
  • Prepare the Chicken Mixture: Slice the chicken into bite-sized pieces and place in a large bowl. Add chopped broccoli, mozzarella, seasonings, and eggs. Mix until well combined.
  • Cook the Fritters: Heat 1-2 tbsp olive oil in a large skillet over medium heat.
  • Scoop ¼ cup of the mixture into the pan, flatten slightly, and cook in batches for 6 minutes per side, reducing heat if they brown too quickly.

 

  • Once golden brown and cooked through, remove from heat and serve warm.

Notes

  • Swap mozzarella for cheddar for a sharper flavor.
  • Use a food processor to finely chop chicken and broccoli for a more uniform texture.

 

  • Serve with tzatziki, ranch, or sugar-free ketchup for dipping.
