Description

These Crispy Caesar Smashed Potatoes are golden, crunchy, and bursting with savory Parmesan and creamy Caesar dressing. They make the perfect easy side dish or appetizer with a satisfying crunch and bold flavor. Serve them with extra dressing for dipping!


Ingredients

  • Nonstick cooking spray
  • 1 1/2 lbs mini potatoes (about ping-pong ball size)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup Caesar dressing, divided (plus more for serving)
  • 1/2 cup shredded Parmesan cheese, divided
 
  • Chopped parsley, optional

Instructions

  • Preheat the Oven:

    • Set the oven to 450°F (232°C).
    • Line a large baking sheet with aluminum foil and coat with nonstick cooking spray.
  • Prepare the Potatoes:

    • Wash and dry the mini potatoes.
    • Place them on the baking sheet, drizzle with olive oil, and toss to coat evenly.
    • Space the potatoes ½ inch apart and season evenly with salt and black pepper.
  • Bake the Potatoes:

    • Roast in the oven until fork-tender, about 25 minutes.
  • Smash & Add Caesar Dressing:

    • Remove from the oven and use the bottom of a drinking glass to smash the potatoes flat. (Spray the glass with cooking spray if needed to prevent sticking.)
    • Brush 2 tbsp Caesar dressing over the potatoes.
    • Sprinkle with ¼ cup Parmesan cheese.
  • Bake Again for Crispiness:

    • Return to the oven and bake for another 15 minutes, until the edges are golden and crispy.

 

  • Final Touches & Serve:

    • While still hot, brush the potatoes with the remaining 2 tbsp Caesar dressing.
    • Sprinkle with the remaining ¼ cup Parmesan cheese and chopped parsley (if using).
    • Serve immediately with extra Caesar dressing for dipping.

Notes

  • Potato Variety: Mini Yukon Gold or baby red potatoes work best for their creamy texture.
  • Extra Crispy Tip: For even crispier potatoes, broil for 1–2 minutes at the end of baking.
