Description

Inspired by the flavors of a Reuben sandwich, this creamy pickle dip is packed with briny pickles, smoky pastrami, and sharp gruyere. It’s the ultimate party dip, ready in just 10 minutes! Perfect for serving with pita chips, flatbreads, or even as a spread for bagels


Ingredients

  • 1/2 cup cottage cheese

  • 1/2 cup cream cheese

  • 2 tsp pickle juice

  • 2 garlic cloves, crushed

  • 1/2 tsp salt

  • 1/2 cup pickles, finely diced

  • 1 tsp chili flakes

  • 2 tsp Dijon mustard

  • 4 slices pastrami, diced

  • 1/3 cup gruyere cheese, grated

 
  • Handful of chives, finely sliced


Instructions

  • Blend the Base:

    • In a food processor or blender, combine cottage cheese, cream cheese, garlic, Dijon mustard, and salt.

    • Blend until smooth and creamy.

  • Mix in the Ingredients:

    • Transfer the creamy mixture to a bowl.

    • Stir in most of the chopped pickles, pastrami, chives, and gruyere, reserving some for garnish.

 

  • Garnish & Serve:

    • Top with the remaining pickles, pastrami, chives, and gruyere.

    • Sprinkle with chili flakes.


Notes

  • No Food Processor? Mash cottage cheese and mix it vigorously with cream cheese, then stir in Dijon mustard, garlic, and salt.

  • Ingredient Swaps: Use sour cream, mayo, aioli, or Greek yogurt instead of cottage cheese. Swap gruyere for parmesan, cheddar, or Emmental. Replace chives with scallions, parsley, or dill.

  • Serving Ideas: Great with pita chips, flatbreads, roasted potatoes, or as a spread for bagels and sandwiches.

 

  • Storage: Store in an airtight container in the fridge for up to 4 days.
