Description

This zucchini noodle mason jar salad is a fresh, healthy, and satisfying lunch packed with farro, mozzarella, and grape tomatoes. With a light balsamic vinaigrette, itโ€™s a perfect meal-prep option for busy days. Just shake, pour, and enjoy!


Ingredients

  • 1 teaspoon golden balsamic vinegar (or regular balsamic vinegar)
  • 3 teaspoons extra virgin olive oil
  • Salt and pepper, to taste
  • 1/2 medium zucchini, spiralized
  • 1 cup cooked farro
  • 1/2 cup fresh mozzarella pearls (or a larger size cut into small pieces)
  • 1/2 cup grape tomatoes, halved
  • 5โ€“6 fresh basil leaves

Instructions

  • Prepare the Dressing:
    • In the bottom of a mason jar, add balsamic vinegar, olive oil, salt, and pepper. Shake or stir to combine. Taste and adjust seasoning if needed.
  • Assemble the Salad:
    • Layer the ingredients in the mason jar in the following order:
      1. Spiralized zucchini
      2. Cooked farro
      3. Mozzarella pearls
      4. Grape tomatoes
      5. Fresh basil leaves
  • Serve & Enjoy:
    • When ready to eat, tear basil leaves to desired size.
    • Pour the salad into a bowl or plate, mix well to coat ingredients with dressing, and enjoy!

Notes

  • If you donโ€™t own a spiralizer, you can thinly slice the zucchini with a knife or use a mandoline to create noodle-like strips.
  • For extra protein, add grilled chicken or chickpeas.
  • Store in the fridge for up to 2 days.
