Description

This Winter Fruit Salad is a fresh, vibrant dish featuring seasonal fruits like clementines, pears, apples, kiwis, and pomegranate, all tossed in a light honey-lemon dressing. It’s the perfect healthy side dish for the holidays or any winter gathering.


Ingredients

Salad:

  • 3 clementines, peeled & separated
  • 2 pears, chopped into 1/2” pieces
  • 1 pineapple, chopped into 1/2” pieces
  • 2 lbs kiwis (about 10), peeled, sliced, and cut into halves or fourths
  • 2 apples, chopped into 1/2” pieces
  • 1 pomegranate, seeded

Dressing:

  • 2 Tbsp honey
  • 3 Tbsp lemon juice

Instructions

  • In a small bowl, whisk together honey and lemon juice to create the dressing.
  • In a large mixing bowl, combine the prepared fruit, reserving ¼ cup of pomegranate seeds for garnish.
  • Drizzle the dressing over the fruit and stir gently until well coated.
  • Transfer to a serving bowl and garnish with the reserved pomegranate seeds.
  • Cover and chill for 1 hour, then serve cold.

Notes

  • Best served fresh, but can be stored in the fridge for up to 24 hours.
  • For a crunchy twist, sprinkle with chopped nuts before serving.
  • Adjust the sweetness by adding more honey or a touch of maple syrup.
