This Winter Fruit Salad is a fresh, vibrant dish featuring seasonal fruits like clementines, pears, apples, kiwis, and pomegranate, all tossed in a light honey-lemon dressing. It’s the perfect healthy side dish for the holidays or any winter gathering.

Salad:
- 3 clementines, peeled & separated
- 2 pears, chopped into 1/2” pieces
- 1 pineapple, chopped into 1/2” pieces
- 2 lbs kiwis (about 10), peeled, sliced, and cut into halves or fourths
- 2 apples, chopped into 1/2” pieces
- 1 pomegranate, seeded
Dressing:
- 2 Tbsp honey
- 3 Tbsp lemon juice
Instructions
- In a small bowl, whisk together honey and lemon juice to create the dressing.
- In a large mixing bowl, combine the prepared fruit, reserving ¼ cup of pomegranate seeds for garnish.
- Drizzle the dressing over the fruit and stir gently until well coated.
- Transfer to a serving bowl and garnish with the reserved pomegranate seeds.
- Cover and chill for 1 hour, then serve cold.
Notes
- Best served fresh, but can be stored in the fridge for up to 24 hours.
- For a crunchy twist, sprinkle with chopped nuts before serving.
- Adjust the sweetness by adding more honey or a touch of maple syrup.
