- 12 oz smoked sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 (15 oz) cans white beans, drained and rinsed
- 1 cup chicken broth
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 cups fresh spinach
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 4–5 minutes.
- Add onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
- Stir in white beans, chicken broth, smoked paprika, thyme, salt, and pepper. Simmer for 5–6 minutes, allowing flavors to blend.
- Add spinach and cook until wilted, about 1–2 minutes.
- Taste and adjust seasoning. Serve warm, topped with Parmesan cheese if desired.

- Use turkey sausage for a lighter version.
- Add crushed red pepper flakes for a spicy kick.
