Description

White Bean Sausage Skillet is a hearty, one-pan meal made with smoky sausage, creamy white beans, and tender vegetables simmered in a flavorful broth. It’s quick, comforting, and perfect for busy weeknight dinners.


Ingredients

  • 12 oz smoked sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 4–5 minutes.
  2. Add onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
  3. Stir in white beans, chicken broth, smoked paprika, thyme, salt, and pepper. Simmer for 5–6 minutes, allowing flavors to blend.
  4. Add spinach and cook until wilted, about 1–2 minutes.
  5. Taste and adjust seasoning. Serve warm, topped with Parmesan cheese if desired.
