Waffles:

  • 2 cups all-purpose flour

  • 2 large eggs, separated, plus 2 additional egg whites
  • 8 tablespoons (1 stick) salted butter, melted

Vanilla Maple Glaze:

  • 3 cups powdered sugar
  • 6 tablespoons whole milk
  • 2 tablespoons salted butter, melted
  • 1 tablespoon vanilla extract
  • 1 tablespoon maple extract
  • Pinch of kosher salt

Toppings:

  • 1/2 cup colorful cereal
  • 3 tablespoons rainbow nonpareils

Instructions

  • Preheat a waffle iron to medium regular setting.
  • For the waffles: Sift together the flour, sugar, baking powder, and salt in a bowl. In a separate bowl, whisk the milk, vanilla extract, and egg yolks.
  • Pour the wet mixture over the dry ingredients and gently stir until halfway combined. Add melted butter and mix gently until just combined.
  • In another bowl, whisk the egg whites until stiff. Fold them into the batter until just incorporated.
  • Scoop batter into the waffle iron and cook according to the manufacturer’s directions until golden brown and crisp.
  • For the glaze: Combine powdered sugar, milk, butter, vanilla, maple extract, and salt in a bowl. Whisk to combine.
  • Cut each waffle in half and insert an ice-pop stick into the short side of each piece.
  • Drizzle glaze over each waffle. Decorate half the pops with cereal and the other half with nonpareils.
  • Serve warm or at room temperature.

Notes

  • These waffle pops are best served fresh, but you can store them in an airtight container for up to 2 days. Reheat in a toaster oven for a crispy texture.
  • Experiment with different toppings like crushed cookies or chopped nuts for variety.
