Description

Crispy, golden Voodoo Fries tossed in bold Cajun spices and smothered in creamy cheddar cheese sauce. These fries are the ultimate comfort food—spicy, cheesy, and completely irresistible.

Ingredients

Units Scale
  • 2 medium/large russet potatoes (about 1 1/4 pounds)
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dill weed
  • 1/4 teaspoon onion powder
  • Ranch dressing (optional, for serving)
  • Chopped chives or green onions (optional, for garnish)
  • 2 tablespoons unsalted butter
  • 1 1/2 tablespoons all-purpose flour
  • 1 cup milk (low-fat or whole)
  • 1 cup freshly grated sharp cheddar cheese (4 ounces)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut potatoes into ¼-inch sticks. Toss in a bowl with 2 tablespoons olive oil, Cajun seasoning, garlic powder, dill weed, onion powder, and a pinch of salt.
  3. Spread fries evenly on the baking sheet and drizzle with the remaining olive oil.
  4. Bake for 25–30 minutes, flipping halfway through, until crispy and golden.
  5. Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  6. Slowly add milk while whisking until smooth and slightly thickened.
  7. Remove from heat and stir in cheddar cheese until melted and creamy.
  8. Drizzle cheese sauce over hot fries, sprinkle with extra Cajun seasoning, and top with chives or green onions. Serve immediately with ranch dressing if desired.

Notes

  • Soak cut potatoes in cold water for 30 minutes before baking for extra-crispy fries.
  • Use freshly grated cheese for a smoother sauce.
  • Add a pinch of cayenne for extra heat.
