Description

These vegan almond flour blondies are rich and indulgent with a soft, chewy texture. Packed with healthy fats from coconut oil and flaxseeds, plus a touch of peanut butter and dark chocolate, they make the perfect guilt-free treat.


Ingredients

  • 2 tbsp Tropical Sun Linseed (Flaxseed), ground
  • 1 cup ground almond
  • 1/2 cup Tropical Sun Coconut Flour โ€“ Organic
  • 1/2 tsp Tropical Sun Baking Powder
  • A pinch of sea salt
  • 1/2 cup Tropical Sun Coconut Oil โ€“ Pure, softened (but not melted)
  • 1/3 cup of sugar
  • 1 tsp of Tropical Sun Vanilla Essence
  • 2 tbsp runny peanut butter (the runnier the better)
  • 1 tbsp of almond milk
  • 1/2 cup vegan dark chocolate chips + extra for sprinkling on top

Instructions

  1. Preheat the oven to Gas Mark 4 / 180ยฐC / Fan 160ยฐC.
  2. In a small bowl, mix the ground linseed with 4 tablespoons of water and leave to rest for 5 minutes until it thickens up and becomes gloopy.
  3. In a large bowl, combine the ground almond, coconut flour, baking powder, and salt.
  4. In a separate bowl, whisk together the coconut oil and sugar. Use a hand blender to blitz until a creamy consistency is achieved.
  5. Add the coconut oil-sugar mixture to the linseed mixture, along with the vanilla essence, peanut butter, and almond milk. Mix thoroughly.
  6. Incorporate the almond flour mixture into the wet ingredients until well combined.
  7. Fold in the chocolate chips.
  8. Spread the mixture in a parchment paper-lined baking tin, ensuring an even spread. Sprinkle with additional chocolate chips on top.
  9. Bake for 18-20 minutes, until the edges start to turn golden brown.
  10. Remove from the oven and let cool for 10 minutes before transferring to a cooling rack.
  11. Allow the blondies to cool completely before cutting them into squares.
  12. Serve and enjoy!

Notes

  • For a different flavor, feel free to swap peanut butter for almond or cashew butter.
  • If you prefer a sweeter dessert, increase the amount of sugar to taste.
  • These blondies are best stored in an airtight container for up to 4 days.
