Ingredients

Units Scale

For the Vanillekipferl Cookies:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup ground almonds

For the Cherry Compote:

  • 2 cups fresh or frozen cherries
  • 1/2 cup granulated sugar
  • 1 tsp cornstarch

For the Layered Dessert:

  • 1 cup heavy whipping cream
  • 1 tbsp powdered sugar

Instructions

For the Vanillekipferl Cookies:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, ground almonds, sugar, and vanilla extract. Add the butter and mix until a dough forms.
  3. Roll the dough into small crescent shapes and place on a lined baking sheet.
  4. Bake for 10-12 minutes or until golden. Remove from oven and let cool completely.

For the Cherry Compote:

  1. In a small saucepan, add cherries, sugar, and cornstarch. Stir well to combine.
  2. Cook over medium heat for 8-10 minutes until thickened. Stir constantly to prevent burning.
  3. Remove from heat and set aside to cool.

For the Whipped Cream Topping:

  1. In a mixing bowl, whisk the heavy whipping cream with powdered sugar until stiff peaks form.

Assembling the Dessert:

  1. Layer the Vanillekipferl cookies in a trifle dish or dessert glass.
  2. Spoon a layer of the cooled cherry compote over the cookies.
  3. Add a layer of whipped cream on top.
  4. Repeat layers as desired until all ingredients are used.
  5. Garnish with additional Vanillekipferl cookies and fresh cherries.

Notes

  • Vanillekipferl Variation: Add a pinch of cinnamon to the cookie dough for added warmth.
  • Cherry Tip: If fresh cherries aren’t available, canned or frozen cherries work wonderfully.
