- 8–10 Vanillekipferl (vanilla crescent cookies), crumbled
- 1 cup cherry compote or canned cherry pie filling
- 1 cup heavy whipping cream
- 1 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup mascarpone or cream cheese
- Optional: Fresh cherries or mint leaves for garnish
Instructions
- Prepare the cream: In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold in the mascarpone until smooth and creamy.
- Layer the dessert: In serving glasses or bowls, start with a layer of crumbled Vanillekipferl cookies. Add a layer of the mascarpone cream, followed by a layer of cherry compote. Repeat the layers until the glasses are filled, finishing with a cream layer.
- Garnish: Top with extra cookie crumbs, a dollop of cherry compote, and a fresh cherry or mint leaf for decoration.
- Chill: Refrigerate for at least 1 hour before serving to allow the flavors to meld. Serve chilled and enjoy!
Notes
- For an extra crunch, toast the crumbled Vanillekipferl briefly in a pan.
- Substitute mascarpone with Greek yogurt for a lighter version.
- You can make your own cherry compote by simmering fresh or frozen cherries with sugar and a splash of lemon juice.
