Description

These Twix Cookies are soft, buttery cookies topped with sweet chocolate and rich, gooey caramel, bringing the iconic candy bar to life in cookie form! You wonโ€™t be able to stop at just one.


Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Topping:

  • 11 oz chewy caramels
  • 1 tbsp heavy cream
  • 2 cups milk chocolate chips
  • Flaky salt (optional, for topping)

Instructions

  • Make the Cookie Dough:
    In a large bowl, combine the softened butter, powdered sugar, and vanilla extract. Using an electric hand mixer, mix on low speed, gradually increasing to high speed once the powdered sugar is fully incorporated. Beat for about 4 minutes.
  • Add Dry Ingredients:
    Sift in the flour, baking powder, and salt using a fine-mesh sieve. Mix on low speed until well combined.
  • Chill the Dough:
    Place the dough onto a piece of plastic wrap, flatten it into a disk, wrap it up, and refrigerate for 1-2 hours.
  • Roll Out the Dough:
    Dust your work surface with flour and roll the chilled dough to ยฝ inch thick. Use a 2-inch round cookie cutter to cut out the cookies.
  • Bake the Cookies:
    Place the cut-out cookies on a parchment-lined baking sheet. Bake at 350ยฐF for 6-8 minutes, until the cookies are just set and soft (do not over-bake).
  • Make the Topping:
    Add the caramels and heavy cream to a bowl or saucepan and melt over low heat until smooth. Alternatively, melt in the microwave in 20-second intervals, stirring in between.
  • Melt the Chocolate:
    Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until smooth.
  • Assemble the Cookies:
    Spoon a dollop of melted caramel over each cookie. After the caramel has cooled slightly, smother each cookie with melted chocolate. Optionally, sprinkle with flaky sea salt while the chocolate is still warm.
