  • 1 lb (450g) cheese tortellini (fresh or frozen)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp dried Italian seasoning
  • Fresh basil, chopped (for garnish)

Instructions

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
  • Add chopped sun-dried tomatoes and spinach to the skillet, cooking for another 2-3 minutes until the spinach wilts.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes until the sauce thickens.
  • Stir in the grated Parmesan cheese and season with salt, pepper, and Italian seasoning.
  • Add the cooked tortellini to the skillet and toss to coat in the sauce.
  • Serve warm, garnished with fresh basil.
