  • 1 heaping cup cottage cheese
  • 1/3 cup pesto
  • 2 tbsp olive oil (divided)
  • 4 small crowns broccoli, cut into small florets
  • 1 1/2 lbs chicken breasts, cubed
  • Salt, to taste
  • 1 pint cherry tomatoes
  • 8 oz shredded mozzarella
  • 5 oz mini fresh mozzarella balls (optional)
  • 2 tbsp grated parmesan cheese

Instructions

1๏ธโƒฃ Preheat & Prepare Mixture:

  • Preheat oven to 375ยฐF.
  • In a large bowl, whisk together eggs, cottage cheese, and pesto. Set aside.

2๏ธโƒฃ Sautรฉ Vegetables & Chicken:

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Sautรฉ broccoli for 3-4 minutes until just fork-tender. Season with salt and pepper. Remove and set aside.
  • Season chicken with salt. Add the remaining 1 tbsp olive oil to the skillet and cook chicken until golden brown, about 5 minutes.

  • Add tomatoes, broccoli, shredded mozzarella, and cooked chicken to the cottage cheese mixture. Toss to combine.
  • Transfer everything to a 9ร—13-inch baking dish and spread evenly.
  • Top with mini mozzarella balls (if using) and grated parmesan.
  • Bake for 35 minutes until golden and bubbly.
