Turkish Ezme is a vibrant, fresh salad with tomatoes, peppers, and onions, seasoned with aromatic spices and a tangy lemon dressing. This zesty dish is perfect as a side or dip for your favorite meals.

- 3 large tomatoes, firm and fresh
- 1 medium white onion
- 1 green bell pepper, see notes
- 1 red bell pepper
- 2 cloves garlic, minced
- 1/2 cup fresh parsley, finely chopped
- 1 tbsp tomato paste
- 1 lemon, juice of
- 2 tbsp olive oil, extra virgin
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp Aleppo pepper
- 1 tsp sumac
Instructions
- Finely chop the tomatoes, onion, green and red bell peppers, and garlic. Place them into a large bowl.
- Add the fresh parsley, tomato paste, lemon juice, and olive oil to the vegetables.
- Season with kosher salt, black pepper, Aleppo pepper, and sumac. Mix well until all the ingredients are evenly combined.
- Let the ezme sit for 10-15 minutes to allow the flavors to meld together.
- Serve chilled or at room temperature as a refreshing side dish or dip. Enjoy with flatbread or grilled meats.
Notes
- The green bell pepper can be swapped for a mild chili pepper for extra heat if desired.
- Ezme can be stored in an airtight container in the fridge for up to 2 days.
