Description

A comforting, hearty casserole combining tender turkey, creamy vegetables, and crispy tater tots. Perfect for a family dinner or potluck, this hotdish is rich, flavorful, and easy to prepare.


Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 1/2 cups chopped onion
  • 2 teaspoons chopped garlic
  • 2 1/2 cups frozen vegetable mix
  • 4 cups cooked turkey (or chicken), cut into small bite-sized pieces
  • 1/3 cup all-purpose flour
  • 2 3/4 cups whole milk (can also be combined with light cream or half & half)
  • 1/8 teaspoon salt
  • 1/2 scant teaspoon black pepper
  • 2 teaspoons Better Than Bouillon Turkey Soup Base
  • 1/2 teaspoon dried thyme (or 1 1/2 teaspoons fresh leaves)
  • 1/2 teaspoon dried rosemary (or 1 1/2 teaspoons fresh leaves)
  • 2 cups shredded cheddar cheese
  • 32 ounces frozen tater tots

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened and fragrant.
  3. Add frozen vegetables and cook for 3–4 minutes until slightly tender.
  4. Stir in flour and cook for 1–2 minutes to remove the raw flour taste.
  5. Gradually whisk in milk until smooth, then add salt, black pepper, turkey soup base, thyme, and rosemary. Cook until sauce thickens, about 5–7 minutes.
  6. Stir in cooked turkey and 1 1/2 cups of shredded cheddar cheese until evenly combined.
  7. Transfer mixture into a greased 9×13-inch baking dish.
  8. Top evenly with remaining cheddar cheese and frozen tater tots.
  9. Bake for 25–30 minutes, or until tater tots are golden brown and the casserole is bubbly.

Notes

  • Use leftover turkey or rotisserie chicken for convenience.
  • Frozen vegetables can be swapped with fresh vegetables if preferred.
  • For extra flavor, sprinkle some smoked paprika or cayenne over tater tots before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
