Description

This Turkey Taco Skillet is a fast, flavorful meal packed with seasoned ground turkey, melty cheese, and tons of fresh toppings! Itโ€™s perfect for scooping with tortilla chips, filling taco shells, or even stuffing into sweet potatoes for a fun twist.


Ingredients

  • Turkey Skillet:
  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 pound ground turkey (94% lean preferred)
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked pepper
  • 1 tablespoon all-purpose flour
  • 2/3 cup chicken stock
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • Pickled onions, for serving
  • Cotija cheese, for sprinkling
  • Lime wedges, for spritzing
  • Tortilla chips, for serving
  • Quick Pico:
  • 1 pint cherry tomatoes, quartered
  • 1/2 sweet onion, diced
  • 1/4 cup chopped cilantro
  • 1/2 lime, juiced
  • Pinch of salt and pepper
  • Quick Guac:
  • 1 avocado
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, juiced
  • Pinch salt and pepper

Instructions

  1. Heat olive oil in a large skillet over medium-low heat. Add diced onions, peppers, and garlic with a pinch of salt. Cook until softened, about 5 minutes.
  2. Add ground turkey, breaking it apart with a wooden spoon. Season with cumin, paprika, chili powder, garlic powder, salt, and pepper. Cook until browned.
  3. Sprinkle flour over turkey, stir to combine, then pour in chicken stock. Simmer for a few minutes until thickened.
  4. Sprinkle cheddar cheese over the skillet. Cover to melt the cheese, if desired.
  5. Top with shredded lettuce, pickled onions, quick pico, quick guac, and cotija cheese. Serve with lime wedges and tortilla chips.
  6. To make Quick Pico: Toss tomatoes, onion, cilantro, and lime juice together. Season with salt and pepper. Chill if making ahead.
  7. To make Quick Guac: Mash avocado with cilantro, lime juice, salt, and pepper. Adjust seasoning to taste.
